weather kept me from fishing....

so made some homemade ravioli…

threw a little extra bell pepper on top on one end as i love it…esp cooked but a little crunchy. Donnie now has some frozen “quick meals”

not fattening at all if yoy just eat the glass bowl

easy pasta /ravioli recipe

easy ravioli pasta recipe…2 cups all purpose flour/3 eggs/1/2 tsp salt…1/2 teasoon extra virgin olive oil. pour flour into a flat large bowl or on a cookie sheet. make into a mound leaving the center scooped out. break and drop eggs into center of flour with salt and oil…beat in center of flour slowly working flour in with egg. use fork or fingers to mix well. kneed for 10-15 minutes…form into ball and wrap in saran paper.(add a little more flour if too wet…a few drops of water if too dry. set aside for about 20 minutes. liberally dust cookie sheet and place dough in center. ( I cut mine into four pieces to work with more easily. roll out as thin as you can, place about 1 teaspoon(according to ravioli size you make ) of desired filling about 2" apart along one side of dough strip. fold other side over them to cover and use ravioli stamp?press to cut and seal edges. can place in freeer on smaller cookie sheet to freeze then vaccuum seal for later servings. I filled mine with a mixture of parm. cheese/1 large egg and ricotta cheese mixed together, to cook being pot of water to a rolling boil and drop in for just a few minutes. will rise to the top as they cook. drain and serve. I made a pasta sauce which I put in the bottom…covered with raviolis…more sauce on top and cheese and baked.
