What is in the shrimp vein

I have de-veined my share of shrimp over the years, but had a suprise today. I have seen a yellowish cream a lot, and always assumed that was roe. Today I saw a chunky white substance, like cottage cheese. I don’t ever remember seeing that before. Two of them in a whole pound of heads off shrimp.
