What is your favorite Thanksgiving items???

MMMM, that’s my favorite dish at thanksgiving, the waldorf apple salad, gramama used to make that like no other could! And the gravy, my niece has now taken over the reins at making gravy and boy, that girl takes it seriously!

Thanks for the kind words and prayers/thoughts for my sis Becca, sure means a lot to us out here. Just brought her home from hospital in Seattle today and she is doing great! She was doing so good they shortened her stay from anticipated 10 days to 6 days! Having her back to good health is something I am more thankful for this year then anything ever before.

My dear buddy, Penny, just called to inform me I needed to put some of my Turkey Day recipes on here. This thing called “work” is interfering enough with my fishing as it is, and I can’t hardly spend all day on the Internet when I’m in my office! Dang, how I wish I had Penny’s work schedule, but I turn into a pumpkin around 9PM every night! It would never work! Penny, by the way, was on her way to try out a new redfish spot when she called!!!:face_with_head_bandage:

Let’s see… we always have Thanksgiving Dinner with our dear friends and neighbors. Some times we fry a turkey, but most times we have a big fat oven roasted one. Guess not everyone loves that fried turkey skin like this Southern gal does!

I’ll be making sweet potato casserole pretty much the same way Penny does. Jack said he wanted MARHSMALLOW TOPPING this year, so for those of you who want to try a different topping on your sweet potato casserole just sprinkle the little mini marshmallows on the top of your cooked sweet potato casserole and stick it back in the oven until the marshmallows start to puff and brown.

Here’s a new recipe I recently discovered, and it’s perfect for the fresh fall squash crop: It’s as close to “HOMINY GRILL’S SQUASH CASSEROLE” as I could get:

2 tbsp. butter
3 thinly sliced zucchini (about 4 cups)
3 thinly sliced yellow squash (about 4 cups)
1 cup diced onion
1/2 cup diced celery
1 clove minced garlic
4 beaten eggs
1 1/2 cups shredded sharp cheddar cheese
1/2 cup shredded parmesan cheese
1 1/2 tbsp. chopped fresh basil
1 1/2 tbsp. chopped fresh parsley
1/2 tsp. Tabasco
1/2 tsp. salt
1/4 tsp. fresh ground black pepper
1/8 tsp. nutmeg (use fresh if you have it!)
1/4 tsp. sugar
3 tbsp. dried breadcrumbs (Progresso ones in the can work just fine!)

Preheat oven to 350 degrees. Spray an 8 by 8 casserole dish with Pam, dust with breadcrumbs and set aside.

Heat butter in large skillet over medium heat. Add onion and celery and cook, stirring until the onion begins to brown. Ad
