I’ve been using 5/0 and 6/0 eagle claw lazer sharp circle sea hooks with live mullet no problems all right in the corner of the mouth. The only time I seem to have a gut hooked fish is due to me letting the rod sit and the bite goes unnoticed untill the drag starts screaming. Good luck hope this helps out.
I find slack in the line is more of the culprit than the kind of hook. Make sure lines are tight when putting rods in the rod holders waiting for a bite.

At first, it will seem like the hook is way too big to fit in the fishes mouth but, you will not loose any fish that you want to catch.
As far as slack in the line. Not a problem. Just watch for movement in the line. Slack line will probably produce more bites… just keep an eye out for line movement.
Circle hooks very, very rarely gut hook. Even if they swallow it, it pulls back out of their gullet usually and hooks them in the lip.
I know I’ve used circle hooks since 2001 and I’ve never once gut hooked anything-- red, catfish, black drum, striper, gar, trout, flounder, etc.
