What temp and how long to smoke a turkey???

For Christmas Santa brought me an electric smoker. My problem is how long and at what temp would you smoke a turkey??? I am thinking 235 degrees and 30 minutes per lb. I have heard you do not want to work with a turkey weighing more that 14 lbs. I am thinking of using apple wood. Your help is greatly appreciated.

I always smoke turkey for thanksgiving but this was the first year on an electric smoker. It took a few hours more then I expected. Look for a good 7-8 hours. Mine wasn’t quite done in the dark meat sections. My smoker has an internal temperature gauge for the good which was nice but I didn’t trust it. Turkey was still absolutely amazing, when I sliced the breast meat it was like slicing a soak washcloth (for the purpose of juicy) and as tender as I have ever had.

I usually do a breast. Spray the whole thing with pam after washing and put directly on the grill on indirect heat at about 325 degrees. Usually ready in about 2 hours and very juicey.

Need at least 212 degrees to get water/marinate to boil.(I go with 250ish)

I do the brine in apple juice / rock salt, smoke in applewood till 170 internal temp. about 6 hours or more depending on wind and ambient temp.

I do the breast only, so maybe take a little longer with whole bird.

As for tender, literally cant get slices because it falls apart as the knif goes through the meat.
