Had originally planned to make a shrimp scampi…took a package of shrimp out and when thawed saw that they were the really small ones form last summer…so resorted to next plan…a “open cabinet and see what I can make of it” dinner…heres what dinner ended up being…was still quick and esy and the girls at work will enjoy the leftovers tonight:smiley:
shrimp
garlic cloves
celery
spring onion
bacon
garlic oil
peppers
diced tomatos
mexican corn (corn with peppers)
ground pepper
Sriracha (hot sauce)
cajun seasoning
brown rice
salt
diced it all up…sauted bacon in little olive oil…added in veggies with seasonings,
added in shrimp…sauted a little more…
.brought tomatoes and corn to a boil
and added sauted ingredients…simmered…tasted…added brown rice…
had some crab cakes i had made and vaccum sealed…cooked those and made a small salad…
