Shrimp and Cheese Grits recipe

It changes from batch to batch for me. But basically Grits 1 cup to 4 cups chicken broth get it cooking…, Green onions, chopped up big sweet onion, big bell pepper, two cloves of garlic, a couple teaspoons of parsley, two celery stalks, and some mushrooms. 2lbs of bacon … chop up bacon cook it up put it aside. use 2 to 3lbs shrimp ( I chop my shrimp in half or thirds as the wife likes lots of small bites of shrimp) Lightly cook shrimp in bacon grease (until pink) remove shrimp and then cook all vegetables in bacon grease adding 1/2 stick of butter.
By now grits should be ready add 2lbs of shredded sharp cheddar until melted good, then add everything else to grits stir it up and sometimes I’ll add a little milk to thin it up.

Forgot, I don’t add any salt as the bacon and chicken broth do pretty good, I also add a good portion (palm full) of old bay to the vegetables and shrimp when I cook them along with a 1/2 teaspoon of pepper.

I usually do this doubled, I also devien all shrimp. I have thrown in some whole corn.

Not as fancy as putting some nice shrimp /gravy over plain cheesy grits, but this is the way I like it best.
