Whole fried pink snapper dinner

Went bottom fishing yesterday and got some pinkies and a couple triggers. filleted the larger ones but left the smaller ones whole… just scaled and gutted em. scored em and rubbed em down with olive oil, garlic, ginger, and some s&p. dusted with corn starch and fried in coconut oil. it was awesome :stuck_out_tongue: skin was nice and crispy

dont think ive ever seen coconut oil in the store before but never paid attention for it either…sounds great whered you find it?

the wife got it at trader joes. it was good although i have no qualms using good ol canola oil
