wild hog jerky

as sad as it is deer seasons almost done and im sure im not the only one thats gonna attempt to take out a few hogs afterwards so heres something i found out worked well last year. if you clean your own hogs, i field dressed/castrated/bled mine out on the spot and cut up the bigger chunks of meat in the hind legs into thin strips for this and did not have a problem with a strong gamey taste even though the animal used was a boar. i also never measure marinade, spice mixes, or anything i make…just keep tweaking until its right so everything here is an educated guess.

-about 2 lbs sliced meat
-2 cups apple juice
-3 tbsp soy sauce
-1 tbsp liquid smoke
-1 1/2 tbsp cinnamon
-2 tsp ground cloves
-1 tsp ground nutmeg

mix well and marinate a couple days, mixing the meat around in the bowl a couple times during the process. place in food dehydrator until done (6-10 hours for me). when i did this last year it ended up tasting like a spiced holiday ham and got no complaints from others whether in SC or lucky recipients that got a vacuum sealed package in OH.
