Dang it you guys! It’s 2 hours to Paul’s store. He’ll be closed before I can get there. AARGH you make me mad, teasing me with your Low Country fresh fare…
Just paypal me the money, I only live 15 minutes from him. I’ll go and get it for you, eat it for you, and tell you how good it was.

That stuff is so good he should sell it by the ‘kilo’
Veggie sub filling sounds great!
I can’t go to Sellsfish and come home without some of it, I’d have to move out from the GF’s house.
I think a lot of the fishy tasting salmon is farmed raised stuff. I was out in Seattle once at Pike’s Place Market and the guy was peer pressuring me to try smoked salmon. I refused over and over again stressing how much I hate salmon. He asked where I was from and told him SC. He assured me that the local wild caught stuff was better. I tried some of it and it tasted like ham. I loved it. Night and day difference from anything I have ever tasted before. I tried the stuff that Paul had and it was very good as well. This is from someone who hates salmon in general.
Skinnee, you are right. I used to fillet salmon every day at the seafood markets I ran (grocery store seafood counters). Most of the year, we sold farm raised salmon and it definitely had a fishier odor and taste to it.
When we’d get sockeye, king, and coho salmon, the smell was totally different, as was the taste. I’m partial to the coho, but king salmon is truly a marvel to taste.

Pacific NW is great for salmon!
I have all confidence that it was an oversight and will be resolved to satisfaction
Besides that, I am a fisherman and know patience. I’ve spent longer waiting on a fish to bite, or the tide to get high enough to float me off of an oyster bar Nothing but a thing. A very little thing at that

Final report on pastrami salmon. Matter was resolved past satisfaction. Stuff happens. The Salmon is excellent and as good as advertised, just finished eating 1/4 pound I think
Vacuum bagged and froze 16 packages in 2-3 person size portions for snacks, plus 3 party size bags, and ate some more. Mrs. Cracker ate a good pile too, and we left some unfrozen for tomorrow:smiley:
Excellent Paul and Marla, thanks again for your trouble.

So this smoked salmon is fantastic, and I’ve still got a lot of it:smiley: Any suggestions for different ways to serve it, other than cream cheese, crackers and capers? Nothing wrong with that, but wanting to branch out. What else goes good with smoked salmon?

Also great if you mash up a nice, ripe avocado, add in a touch of garlic, and some of the smoked salmon. I prefer to chop it up into quarter-size pieces. Put this on a sandwich or on any sort of bread product.
