I know there is a cooking thread put had to do it here guys.
Put a little Mayo in a bowl. Add shredded Pepper Jack, Parmesan & fresh Dill & a squeeze of Lemon.
Rubbed down the Spade fillets with a light coating of Olive oil while a cast iron skillet was heating on the grill…get it hot.
Let the fillets come to room temp then coat with the Mayo mixture. ON TOP ONLY. Then hit the grill. Do not flip. They were done when mixture was browned on top.
Man it was awesome!
