Favorite Fish?

What are yall favorite fish to eat? And favorite way to eat them?

favorites period: deep fried walleye and yellow perch
favorite charleston fish ive actually caught: flounder stuffed with blue crab, mahi (blackened and sushi)
honorable mentions: redfish, sea trout, whiting, shark, sheephead, blue cat.

  1. Trigger fish- sautee’d in a pan with butter and herbs.
  2. Mahi- blackened or grilled
  3. Flounder- fried

AJ - sliced and fried in House Autry’s
HogFish - baked with mayo, butter, parmesan baste
Sheepshead - sauteed, fried, broiled

ok, maybe not AJ at the top but I eat it.

Man that’s a hard one. I cull little and love em all down to chunks of deep fried mudfish in corn meal and sardines on buttered toast.

Favorite freshwater would be Walleye fillets lightly battered and fried.

I don’t know that I could pick just one saltwater fish.

Grilled: Mako, wahoo, tuna, triger fish, dolphin, grouper

Pan seared: Dolphin, grouper

Deep fried: Speckled trout whole fish scaled in Zaterans same day as caught.

Raw: wahoo, tuna.

although wahoo is purty durn tasty

BFT/Raw- sliced off the belly - before the fish has ever been on ice.

Mahi - on the boats grill with a litte olive oil, salt & pepper - before the fish has ever been on ice.

Striped bass - fresh 2" think steak, a little Old Bay or J.O. Seasoning & butter, broiled and put on a fresh kaiser roll with some cheddar cheese.

Black sea bass - baked with butter/salt & pepper.

I don’t like to fry fish. I like the way it tastes, but I think it ruins the fish.

Good topic. Fresh water, I love fried Crappie fillets. Never had Walleye, but I have heard that it is great. Mudfish - NO WAY!!.
Salt water, I REALLY LOVE Flounder cooked almost any way. Sheepshead is fantastic fried or pan-seared. Would love to try the Blue Fin Tuna that has never touched ice, but that opportunity will probably not happen. I don’t care for Amberjack and I have never had Triggerfish. Spottail is great pan-seared with only salt & pepper. I love to eat fish, especially local fresh.

the top 3 fish are vermilion snapper a friend gave me from a charter he took, the tail section is a WI salmon i caught on my last visit there and the other fish are pompano i caught in Jacksonville FL there’s some garlic cloves and the cheddar stuffed peppers. i stuffed the bellys of the fish with some spices,onions,and small chunks of apples, i brimed them in a seasoned brim salt/sugar onion, bay leafs, carrots, and celery, warmed for 20 mins on the stove then cooled before i soaked the fishes over night:)

those look like some fat pompano and im about to live an hour north of the jacksonville area very soon…may have to try smokin em if i can catch em.

Used to catch them in the surf on Amelia Island in the summer when I was stationed in Kbay. You can dig sand fleas from the beach to use for bait.

Funny how different regions have different tastes in fish - I grew up fishing the TX coast and didn’t really eat sheepshead unless there was nothing else but amberjack were a prize (they aren’t usually wormy over there). But the best fish I can remember eating was atlantic croaker wrapped in foil with butter and lemon and cooked over the campfire coals. But it may just be that camping on a deserted beach after the first cold front of the fall makes everything better!

Never tried smoking a whole fish, but I think I’m going to! Looks awesome.
