First time fishing in Edisto

We’re headed down to Edisto the second week in September to do some alligator hunting and we’re hoping to do some fishing while we’re at it. All fishing will be catch and release, so I’m not particular on species, I just want to have something for the kids to catch. I don’t have much saltwater experience, and the extent of my knowledge is Murrells Inlet and bottom fishing around the jetties. Looking at maps, I don’t see any clear cut place similar to that to try. Any suggestions on where we can try to anchor up and bottom fish with cut bait? I have a 6 year old son who loves catching the small sharks out on the closest inshore reef of MI. Is there anything close to try like that? I have a 21’ aluminum Bay boat and don’t mind venturing out a little ways in calm weather. And finally, I see a lot of posts on Facebook of people following shrimp boats and catching some pretty big sharks. Any advice on how to get started with that? Thanks in advance.
