Put some threaded inserts in the console and you can use wingbolts to attach and remove the windshield grab rail real fast and easy, have done this for a few folks with same problem. When I say “wingbolt” I don’t mean a traditional one, but a stainless bolt with a round plastic thumb screw on it that you tighten and loosen by hand.

To build on RussB’s ideas, you can cut the grab handle and put a sleeves with locking pins on the bar to make the top of it removable. I’ve seen some elegant solutions, even some that were hinged.
You said that the boat cannot be lowered on the trailer, but can you lower the trailer? The easiest way to do that would be to put the axle on top of the springs. (You may want to check with the trailer manufacturer before trying that one.) Also, make sure you’ve got the clearance on your fenders and the ramp you use isn’t too steep.
The last idea is to get smaller diameter tires for the trailer. You’ll need to check on the load ratings and such.
I will assume you have an automatic garage door opener. be sure that you have adjusted it so the garage door goes all the way up. I gained about 3" of clearance by doing that.
i also put the tongue jack all the way down, but you already mentioned that.
or if your bunks are vertical see if possible to lay them down…mine is like that for similar reason…but do be careful of reduced clearance under the skeg of your motor…ouch…
My 21’ Tidewater’s grab rail was hinged and the windshield attachments made to be removed in less than a minute for the previous owner to park in his garage. I don’t have a need for it at this time because the boat stays outside under a cover, but it works rather well.
