pecan recipes

Gotta do something with them all. Any idears? Anyone have any recipes for remarkable pecan pies? I’ve heard of using chocolate and/or peanut butter chips in the recipe and it turning out pretty good. How about pralines or baked pecans?

That’s a nice haul! Gathering all those up in your tackle bag must have been quite a sight - the critters must have been staring at you from the woods saying "Hey! That big tailless squirrel is taking all our nuts!
I made a pecan pie this thanksgiving and in trying to boost my ratings in competition with my wife and her pecan/pumpkin crisp I put a layer of choc morsels in the bottom of the pie. But the best use of pecans I know of is in bourbon balls which we make every year around xmas. There must be a pecan version of the dude in Forrest Gump - “You got your pecan soup, candied pecans, sweet and spicey pecans, pecan encrusted grouper, pecan stuffed pork loin, pecan cake, pecan pralines, pecan bourbon smoothie, pecan waffles, pecan pancakes, etc etc” I’ve got pecan fever looking at that bag!!! Help!!! But really you probably do have more than you can handle so when you get tired of cracking, give me a call and I’ll take those things off your hands. lol

Here’s a recipe for Bourbon or Rum Balls - calls for a cup of chopped pecans! You’ve got lots and lots of cups of pecans, from the looks of that Big Blue Bag, too! :slightly_smiling_face:

RUM OR BOURBON BALLS
1 c. powdered sugar
1/3 c. rum or bourbon
1/4 c. light corn syrup
2 1/2 c. crushed vanilla wafers (food processor makes this step easy!)
1 c. chopped pecans
Stir together powdered sugar, alcohol and corn syrup. Then add the crushed wafers and chopped nuts. Mix until evenly moistened and pinch a walnut sized piece and roll it firmly between the palms of your hands, repeat until all balls have been made. Then sift 1/2 cup powdered sugar and 1 tablespoon cocoa powder onto a plate, roll the balls in the powder until evenly coated. Store in an airtight tin with doilies or wax paper between layers. Recommend candy sized Christmas cups for serving.

Makes about 20 balls.

my recipe is about the same - but I use 1 cup of bourbon and soak the chopped nuts in it overnight also I put the coco powder to the mix give chocolate taste and brown color and just roll em in the powdered sugar.

Pralines are a traditional southern treat this time of year, there are dozens of recipes on the web. I prefer the traditional ones made with white granulated sugar, not brown sugar (which is just molasses added). The caramelization turns it brown. You need a candy thermometer, it is not difficult but timing is critical to stop at the soft ball stage.

Buttered Pecans was something my mother used to make around the Holidays every year, Simple to make. Melt some butter, toss the pecans around in it along with a little salt. Bake them in the oven for a little bit on 250. Tasty

My moms makes these around the holidays:

1 pound pecan halves
1 tablespoon fresh rosemary, minced
1/2 teaspoon cayenne pepper
1 tablespoon dark brown sugar
1 tablespoon kosher salt
2 tablespoons unsalted butter, melted

Preheat oven to 350.

On an ungreased cookie sheet, spread out pecan halves and bake for 8-10 minutes or until lightly toasted and fragrant.

Meanwhile, mix together the rest of ingredients thoroughly in a bowl.

When pecans are toasted, toss with spice mixture. Put back in oven for a minute or two.

Best recipe I know is after the wife shells them and puts them in the freezer, wait till she goes to bed and sneak a bag and eat em. When she misses them blame it on the kids:smiley:

They turned out great. I altered the recipe and used

two 12 oz boxes of Nilla wafers(Piggly Wiggly brand)
3 cups pecans
1/4 c Karo syrup
1/4 c honey
1/3 c Bacardi Rum
2 c powdered sugar
1/2 c cocoa powder
1 1/2 tsp cinnamon

made about 70 balls

I have that in my recipe collection, and I’ll pull it out after dinner and post for you in the morning.

I got some pictures but I may wait till I make some pralines tomorrow to put them up. I already gave all the rum balls away! but I’ll be making more for Xmas gifts. I’ll trade some for offshore trip on the big boat…

Nice post. I got a bunch of nuts from a friend’s yard, I just like eating them raw, as does my dog. I did catch a good amount of Black Drum last weekend and will be trying some kind of combination there, not fried though. I’ll let you know.

  • Easy Pecan Pretzel Bark*
    ---------------------------------------------------------------------(1) cup chopped pretzels
    (1/2) cup chopped pecans
    (1& 1/2) pkg(8 squares each) semi sweet chocolate, melted

Stir pretzels and peacans into melted chocolate and spread onto waxed paper covered baking sheet.
Refrigerate 1 hour or until firm, break into pieces.


  • Easy pecan fudge*
    ---------------------------------------------------------------------2 pkgs (8 squares each) Bakers semi sweet chocolate( can also use white chocolate)

1 can (14 oz) Eagle brand sweetened condensed milk

1 cup chopped pecans( I use a little more)

2 tsp vanilla

*line baking pan with foil
*microwave chocolate and milk on high for 2-3 minutes or until choc. is almost melted, stir in nuts and vanilla
*spread into pan
*refrigerate for 2 hours or until firm. use foil to lift fudge from pan, cut into squares, store in refrig. for up to a week. for creamier fudge let stand a t room temp for 1 hour before serving

Here’s the Pecan Encrusted Grouper Recipe, as promised!

1 cup pecans, chopped fine in processor
2 cups flour
1 tsp. salt
1 tsp. pepper
1 8-12 oz. grouper filet
2 tbsp. butter
2 oz. white wine
1 tbsp. orange juice
1/4 cup chopped pecans
1 tsp. chopped parsley

Combine the 1 cup of finely chopped pecans, flour, salt and pepper to make pecan flour. Dredge grouper filet in flour. Spray saute pan with cooking spray and cook grouper filet on both sides until done, being careful not to overcook. Remove filet from pan and deglaze the pan with wine and juice. Add butter, pecans and parsley. When butter has melted, pour the sauce over the grouper.
