Since I’ve been laid up with a cold for the past week, I decided to make prime rib since it pretty much requires that I stay at home for several hours. HT has them on sale through tomorrow for 5.99 per pound. If you love prime rib and think it’s too difficult to prepare at home, think again! This is super easy, and it turns out fabulous every time.
Allow roast to stand at room temperature for at least 1 hour.
Preheat oven to 375 degrees. Rub roast with House Seasoning; place roast on a rack in the pan with the rib side down and the fatty side up. Roast for 1 hour. Leave roast in oven, but do not open the oven door for 3 hours. About 30-40 minutes before serving time, turn oven to 375 degrees and reheat the roast. IMPORTANT: do not remove roast or re-open the door from the time roast is put in until ready to serve.
House Seasoning:
1/2 cup of salt
1/8 cup of black powder
1/8 cup of garlic powder
Mix ingredients and store in an airtight container for up to 6 months. Great rub for steaks as well.
ASB Note: I reheat roast for only 20 minutes as we prefer rare to medium rare. Reheating for 30-40 minutes will only give you a slightly red center with the outside cooked medium.
I use probably twice the amount of seasoning called for in the recipe.

I don’t even want a steak any more without a baked sweet potato. The prime rib looks awesome! Was the wine a Cabernet Sauvignon?

Wine was a 2007 Pinot Noir by Beringer - I always buy wines at HT that have stickers indicating the most dollars off the normal price. And, always 6 bottles at a time to get the 5% savings, but this past weekend it was 10% off a half case. I’m thinking this wine was 7 bucks off the normal price which may have put it at 9 or 10 bucks… You don’t have to spend a bunch to get a good bottle of wine. Plus, Bruno at HT on Folly Road is a tremendous help! He knows what wines we enjoy, so he always tells me what to purchase.
So Andi “dear”…i have to ask…since this Forum topic is “Cooking Your Catch”…just how long did you have to chase that cow to catch it and were you wearing that outfit:wink:!!!…lol…couldnt resist…
Dearest Penny - that’s not a “cow!” It’s a “steer” on those plates - well, a small part of one… And, I’ve chased my fair share of steers on the farm coming up, too! May as well have caught the darn thing! Been drug around by plenty of 'em too. So much that I smile with every bite of good angus beef taken!
As for the tacky un-matching outfit, I exchanged the jeans for my comfy sweats! Jack snapped the picture - good thing he got the side of my face that did have “rouge” on it(my Granny calls it that instead of blush - she’ll be 88 next month!)
Good thing about a REAL friend like I have in Penny - they ALWAYS tell you when you have lipstick on your teeth, your undies are showing, or, in this case, you only have half a face of makeup on!
MMMMMmmmm, looks awesome Andi!! Not a big steak eater anymore, but when I do it’s usually prime rib! Sweet potatoes are so much better for a person too, and tasty as all!

Absolutely, you can freeze a prime rib before you cook it! I bought a couple extra to have on hand since they’re such a good price now. Hurry to get yours today as the specials end tonight. Seems as if in years’ past that HT runs the same specials the week after Thanksgiving as well, though.
Costco also sells really good cuts of prime rib, but their prices aren’t quite as good as HT’s sales price going on now.
Harris teeter has some of the prettiest rib roast right now for 5.99 lb. ( reglar 11.99 lb) picked up three this morning. Went to get one and got him to cut it for me…yes…even on sale they will do that for you and make sure you are happy with what you get…then the other guy puts a couple more out marked down to 3.99 lb from day before…still looked just as fresh. Brought them home and added a vacuum seal bag to them and in the freezer they went…will have them for the new year . The other one is baking in the oven as we speak. Love to cook them this way…as andi said in her original post…can’t go wrong…unless someone opens the oven door
Mr. K, at the PIG in Summerville got me hooked on using Cavenders Greek Seasoning on my Prime Rib. Try it you’ll like it! I use it on burgers, steaks and most everything! You can buy it at the Pig if you are near one that’s left, also WALMART has it.
