I did this a few weeks ago because it was too late in the afternoon to BBQ.
Large pot of water. Lots of salt. One whole onion peeled. One celery stalk. Five or six clove garlic. Cayenne pepper. Bring to a boil and simmer for a few minutes. Drop in whole rib racks ( I did two). Boil for 45 minutes. Meanwhile get charcoal grill ready and hot. After 45 minutes remove ribs and cool for about ten minutes. Slather the ribs with Dukes mayo and season with salt and pepper or old bay or chef tony or whatever you have. Grill for twenty minutes to get charcoal flavor and a little crust on the outside. I threw some corn, squash and bell pepper on the grill as well.
I know it’s not BBQ, but it is the easiest fastest way to do ribs IMO.

No. No. No. Charcoal grill indirect at 250 for 3-4 hours if you dont have a smoker.

Here is a great recipe. Spread McCormick Grill Mates Applewood rub on a rack of ribs. Double wrap the ribs very tightly with Saran Wrap. Put them in the refrigerator overnight. Cook them in oven for 4.5 hours at 225 degrees. The Saran Wrap will not melt! Remove the Saran Wrap. After the ribs cool a few minutes, slather them with Sweet Baby Rays sauce. Finish the ribs on gas/charcoal grill for 2-3 minutes on each side—just long enough to get a bit of “burnt” on the ribs and caramelize the sauce. You may need a spatula if the ribs start falling apart. The best of both worlds—fall off the bone tender and nice crust.

I’m certain it has crossed Peapods mind that he make some ribs, during this difficult time, and invite you over if you bring the wine and beer.
Bonz, had a guy at work bring some in he had done in crockpot. He cut them in 2 & 3 bone pieces, placed in pot and simmered in Coke for awhile then poured out the Coke/fat and poured some sauce in there to finish.
They were Awesome!!
I have used the Coke for par boiling many times since, then finishing on grill.

If you get serious about ceramic cooker, dont overlook the Kamado Joe.
If you are in a salty area, the Kamado offers one with stainless hardware.
