Did not do so well looking for redfish. the tide was wrong for the time we where there and the Rockville Regatta had the fish spooked on the spots i wanted to fish. so we had to make other plans. worked out fun though. My first bonnet head shark. What do you guys do with them. Kept this one but are they any good to eat? and yes we bled it out, cut the tail off. What a mess. Not sure I would do it again , but catching this 30lb was fun.

That is a big one. They have been large this year. We caught several back in June that were 20-25 lbs. They are aggravating to clean but I like the texture of the meat. I remove the head, tail and fins and cut down the bottom side of the body down the the backbone. Filet around the backbone and remove it–thereby “butterflying” the fillets. Run the knife down both sides of the filets and remove the skin. The skin will dull a knife so keep a stone handy. Soak 8 hours (no longer than overnight) in zesty italian dressing and grill on a hot grill. That is my favorite but if you fry it, cut it into bite size chunks so that you can fry it crispy.
I think if you will do a bit more searching you might find that this just might be a hammerhead and not a bonnethead.

You may be right. But it’s hard to tell with the angle of the head in the picture.
