I’m not sure. I got a few down in Ft Lauderdale last week during mini season. The locals I was with cooked a load from last year and they handled them the same way you mentioned. It was a little tough to me. I kind of felt like that was from freezing it. I cooked 2 from this year when I got back to SC, they too were a little tough. Possibly that was my fault, but maybe the freezing action, I guess that it pulls the water/moisture out of the tail. How did you get yours?

The guys I went with picked one up offshore Sat. Is OK to just ice them down for a few days or do you have to immediately freeze them?
Break the tail from the carapace. Use an antenna to stick up the anal vent to pull out the nasty stuff.
Boil for a minute or so, split the tail, then butter and broil to finish. Tasty.

After you break the tail off there is a film on the underside that you need to cut out, just use regular kitchen scissors for this. I usually will then cut the tails in half because they are so rich my wife can only eat a half. Get one of those throw away metal pans from grocery store and lay the tails shell down in there. Melt some butter and pour over the top, sprinkle garlic pepper and Everglades Seasoning (This can be found at Publix, this stuff is the best). Put on the grill cooking for 8 minutes shell side down and 3 min meat side, then serve. Very tasty!
we cut off the tails, split them and grill them, i think googled online for a recipe. As far as the hogfish, you just about can’t beat cutting it into chunks, season, flour and fry, almost melts in your mouth
