What tide does everyone fish , incoming , outgoing , dead low , dead high ?

prefer dead low incoming high to 2 hrs past dead high

All of the above. But I have had my best luck on incoming tides.

A few hours before low to a few hours after. That is a pretty full day of fishing. I like a low tide about 10:00AM. On the beach at dark thirty, packing up 12:30-1:30. Or incoming all day. Summer months are hard to fish, so many people in the water. So for me, early on-early off regardless of the tide.
