Fished a saltwater creek today. Started out with fiddler crabs until I could net some finger mullet. Glad I caught some mullet since I was not getting any action on the fiddlers. In between small blacktip sharks I managed to catch a 22" Red and a Jack Crevalle. Going to grill the Red and put the Jack in a smoker.
I think folks have a tendency to confuse AJs (AmberJack) with Crevalles when talking it down as table fare. I will stick to grilling the Crevalle versus smoking as it came out a little dry although the flavor was good.

I caught a large Jack Carevelle the other day and kept it. Cleaning it, I found a lot of dark red meat which I cut out. After getting all the good looking meat I have about 2 lbs. from a 15 pound fish which looks like tuna meat. I'm glad to hear that it's edible. I'll be grilling it. Thanks
