The prep.

Protip: its easier to get good clean cuts if you don’t let it thaw fully.

Cut it as thin as you can. It helps to have a very sharp knife.

And it helps to buy local.

Marinate for 24 hours. There’s a thousand recipes online, but I prefer two. One very traditional plus some jalapeño and a sweeter one with onion teriyaki.
