I’ve eaten cuda a few times and it was OK, not great. I’ve also eaten cuda that was bad and it was a terrible experience, one not to be repeated There ain’t no way I’d eat another one, I’d rather eat the squid and cigar minnows in the bait bucket. I don’t even want one of the stinking things in the cooler with the good fish, everything in there will taste like that nasty cuda. But to each their own:sunglasses:

A lot of people don’t like it or won’t eat them but you can cook em. Let it sit in Italian dressing over night then put it on the BBQ . There are recipes for barracuda so people do eat them. People are fast to call fish trash fish but a lot of these fish are good eating!!!
I’m not sure what all the fuss is about. I grew up in the caribbean and we ate barracuda all the time. Back then we would cook it with a silver spoon in it’s mouth. If the spoon tarnished the cuda would be used for fertilizer. If not we would eat it. After we tarnished all our silver spoons (you could only use them once on a bad cuda) we started feeding them to our pet mongoose. After 24 hours if the mongoose was fine, so was the cuda. Unfortunately the mongoose developed a resistance to ciguatera which ended his usefulness as a test pet so we were forced to develop a system for purging the cudas of ciguatera. Basically you keep them alive for 48 hours after capture in some type of flow thru system and dose them every hour with 100mg/kg of cod liver oil and a dash of ground tamarind rind and 3oz of Mt. Gay Rum. After 48 hours the ciguatera is gone and they are ready for the grill. Since moving to South Carolina I have refined the system into the two portable units below and I have found that menhaden oil adds a nice local flavor to the final product. Aside from the one cuda that I gave LSK for her crab traps, this system has been flawless on all the others I have put thru it, but for the right price I would be willing to sell the patent to the first person to PM me!
I had some fried cuda a few times and it was really good. I don’t keep them because they stink, though. Always heard the smaller ones were safer to eat. There are a lot of other fish out there that are better. Never ate a ringtail, though. Prolly tastes like a bream. Nice work, gotta start somewhere!
i recently went on an offshore trip and caught several cudas in north florida and to each their own, but whether people call them trash fish or not they were still fun to fight and jumped like crazy once hooked…and were pretty willing biters too. all 9 people on the charter got plenty of turns at the rod (caught some small kings, 4 - 6 foot sharks, a cobia, and a bonita too) and everybody was happay happay happay! i will admit they had a nasty smell in the fish box, but once we filleted the smaller ones the meat didnt smell different than any other fish. the one you have pictured looks bigger than the ones we kept for fillets, but the big ones became "bait"acudas for surf sharkin. what i did with mine was pretty simple: fish tacos. cut the fillet in strips and be sure to remove all the red meat, then dust with cumin, chili powder, cayenne, paprika, garlic salt, and cilantro. douse with lemon juice, bread and fry. along with standard taco toppings i made a bit of peach salsa and it turned out great with no adverse reaction that night or the nights following even after eating a fairly large piece. meat was firm, mild, white, and flaky and i thought it tasted fairly close to redfish which i dont hear too many complaints about that. most important thing is ya enjoyed your trip and keeping a legal fish is your choice. again that ones bigger than the ones we filleted but hope it turns out good for ya!
I have eaten cuda meat before and it was very good. That was many years ago and before I knew how dangerous it is. There is no reliable way to tell if they have it or not. Its a crapshoot that is just not worth it. Dig a hole in your garden and plant the cuda and plant a tomato plant over it next year. . . With that said, a cuda caught still fishing is great fun watching the way they rocket straight up out of the water! Its all fun - but please don’t risk your family’s health.
I’ve eaten many that were just a few pounds great white meat,but any bigger then that they are just to dangerous to eat. I came from a family of 10 and if it bit the hook it went home. They are fun to catch but the fish we have available to us in SC, no need to keep them. Best point of the night, and think about this------why can’t you buy them in a fish market??? LIABILITY!
