Who’s got a classic tomato pie recipe?

Wife tried something weird last time with bleu cheese, looking for something simple and can’t turn up any of my copies of Charleston Receipts at the moment

Mine are never the same twice. I use all the regular suspect spices, but I blanch and peel the tomatoes firse, and then drain well. Most people end up with a wet pie because they dont squish and drain the tomatoes enough

That and i only use pimento cheeze, just my preference

This is the recipe I use as a guideline. Many years ago a man named Weldon Bell had a couple of shrimp boats and a shrimp house on big bay creek at Edisto. Mrs. Bell made tomatoe pies and sold them at the shrimp house. I used to bring her apples and walnuts in the late summer and fall and she’d give me pies and bait shrimp,good bait shrimp.
