He!! Yeah,reminds me of a bil that drove a seafood truck.Always kept me supplied with crab and those nasty vacuum packed tuna steaks because he never had anything but canned tuna.haha

I’ve not aged any my self other than forgetting something in the frig for a couple days… Why do you prefer the wet aging over dry? I was given a dry aged ribeye(45 days) from Lowes around Christmas and it was supper good, not sure I’ve had a wet aged…

It just kosher sea salt, coarse ground black pepper, just a smidge of minced garlic, a tablespoon of lemon juice, and quarter cup of Worcester.

Then vacuum seal for a few weeks.

That gives the meat time to absorbe the goodies, (osmosis) throughout. The lemon juice and Worcester help break the meat down or tenderize it as the butcher says.

If I’d have planned better it would have been dry aged a month, but I got lazy. Besides thet WR Reserve is already aged a few weeks anyway, so its awesome.

Boys surf fishing trip next week at the outter banks. Theres always plenty of fish, so I do steak and potatoe night. Its a big hit

Wet aged is very common. It’s in cryovac sealed bags and is typical grocery store meat. It must be under constant refrigeration . Any store that cuts their own meat generally uses wet aged. Whole sides fresh that grocers used to get are unusual in the market place today.

That looks almost perfect. But I like Bambi a little more red. Some people asked me how do I get rid of the wild game taste. I tell them that if the deer is processed quickly there is no gamy taste.

IMO the best way to get rid of game taste is to eat a nice fat Nanny… Who in their right mind would eat a Billy Goat? Or an old Boar Hog? No different with a Buck, other than over looking the fact nannies don’t have horns and are not worth putting on the wall. Don’t get me wrong, I’ll eat a big buck and be happy with his horn trophy… but ALWAYS know a doe tastes so much better…

I have no reason to shoot a buck unless he is over 14 points and over 165 lbs. I have all the mounts I need . Young does are very delicious and the largest portion of the whitetail population. And I know for sure that 2 —3 year old does eat really good. I’m with you on this Fred

Never fished the outer banks. What are you going to target? I know a few have started catching some large Spot Tail around here in the surf. That chunk should do steak night for a couple nights unless you’ve got a big crowd. :+1:

They get a few of the Big reds but I think they mostly target the big black drum.
From the surf I believe…
I have a group of snowbird friends that go every year. I’m always invited but I’ve never went. I think they do more drinking than fishing.
